Paul Kapner, C.E.C., has been Executive Chef of the Food Service Training Academy since 2005. Three times a year, he welcomes new students to the school. As the FSTA’s impassioned leader and coach, he wants students to embrace the program and prepare for the demanding realities of the workplace. “You’ve gotta understand how the industry works,” he tells them. “It’s not friendly and forgiving the way we are – - at least most of the time. Here you have the luxury of taking a few risks and making mistakes. You screw up, and we give you second chances. And third chances. But out there, the rules are the rules.”
